German Apple Cake
(From Marte Mendoza aka Bridge Marte)

2 eggs
½ - 1 cup vegetable oil (used ¾ cup)
2 cups sugar
2 cups flour
2 tsp cinnamon
A bit of nutmeg
2 tsp vanilla
1 tsp baking soda
½ tsp salt
5 cups diced apples
1 cup nuts (used finely chopped walnuts)

Preheat oven to 350 degrees.

Beat eggs and oil together.  Mix in the sugar.
Mix the dry ingredients together.
Then mix moist and dry ingredients together.

Add the diced apples and nuts.

Bake in a 9x13 pan for 45 minutes or until done in the middle.

Serve with ice cream or whipped cream … or just cake.
